The taste of this wine is unique. Unlike the regular (non-macerated) Ribolla, the orange wine undergoes a longer (14-day) temperature-controlled maceration process. Maceration involves the must being in contact with the grape skins, seeds, and flesh for a certain period. During this time, fermentation occurs at a controlled temperature.
The wine's flavor is slightly tannic, as the maceration process develops a high tannin content. At the same time, its freshness and vivacity are very noticeable, characteristic of the Ribolla variety.
