Ivan Noir is the complete opposite of the tradition of the place where I live, and is a bold attempt to complement the wine. Cabernet grapes Sauvignon comes from Goriška brda and represents 45% of the weight. Merlot comes from the hills near Dornberkain from the Waterfall near Vipava and together represent 50% of the wine. Barbera also comes from Slap and represents 5% of the wine. Vinification is traditional, 14-daily fermentation with strawberry peel and natural yeasts. Deep ruby colors with shades of purple. The bouquet is lively, youthful, after ripe cherries, coffee, brisket. Dry mouth, higher acids, not much tannins, especially in terms of varietal composition.
