Is a must with Game dishes, red meats (roasted, grilled), dried meats, mature and spicy cheeses.

Wines and foods that are single-noted can be made whole when put together. With Barbera wines try rich dark meats, mushrooms, herbs, herbaceous cheeses like blue cheese, higher tannin foods like root vegetables & braised greens. The idea here is that the bright acidity in the wine will make a rich fatty or high tannin dish complete.

Vinification: fermentation with maceration for 14 days, gentle pressing and flow into oak barrels - barriquee Maturation: maturation in barriques for 24 months

1. Sommelier

This wine is produced limited, strong bodied wine with dry plumbs note, perfect balance between sourness and bitterness. Best with red meat or foie gras pate + wine grape jam, or with a dessert mascarpone cheese and cherries.

The wine is of a very deep opaque red ruby color. The bouquet is intense, with noticeable marmalade notes of ripe fruit, raisins, wood and smoke. Give the wine time, it opens nicely. In the mouth it is slightly sweet, bold, the tannins are softer. Higher acids somewhat soothe a slightly burning sensation due to higher alcohol levels. In the mouth we find notes on the ground, indicating a long period of maturation. Medium-long aftertaste that does not promise a longer ripening period.
