Manual early harvesting of biodynamically grown grapes. Short maceration of grape mash, pressing and decantation of must. Spontaneous fermentation and maturation of wine in steel tanks, on dead yeast. The sparkling wine is produced according to the classic process with secondary alcoholic fermentation in a bottle and prolonged aging on yeast (at least 36 months). Degorging without shipping liqueur.
