The lunar equivalent in bubble stories. Puro begins where other champagnes end their lives and go on to age. The upside-down Puro lives forever, as the ever-present yeasts can keep it alive for years to come. There is only as much sulfur as yeast has made. The nose is nicely matured, tertiary, but still with plenty of freshness. Dry, very homogeneous in the mouth. Very complex, long, great sparkling wine.

Quality
Grapes are desteemed and put in vinificator with skins where the first fermentation begins with indigenous yeasts. When the fermentation is finished we wait for another week anf after that grapes are pressed and racked in barriques. After 2 years of aging we bottle the base wine with approximately 7 % of grape juice from the current year instead of liquer de tirace which is used in clasic method for sparkling wines. Grape juice contains natural sugar (fructose) and indigenous yeast, so no sulfits are added.
