70% Rebula, 20 % Sauvignon, 10% Pinot Gris
We vinificate Pinot Grigio and Sauvignon (1 day of maceration) and Ribolla (5 days of maceration). At the end of fermentation we put all the wines seperately in barriques. After aging process Aleš blends the combinations and creates Veliko Belo.
Because we wanted to create a new quality, a new style of wine, we at Veliki Beli decided to mix grapes (or musts when they were still fermenting), rather than already made wines. In this way, we get a truly new wine, where one variety does not seem to stand out more than another, as is the custom when blending already built wines. By mixing grapes or must during fermentation, we obtained the basic wine, which is ripe for finalization only after three years of maturation, when pure varieties are added to it to maintain the style. We selected the following varieties: o ribula, which is the backbone of wine and decisively shows that the Great White comes from Brda, from our cellar; o Pinot Gris, which, despite its fruitiness, is a carrier of elegance; o sauvignon, which raises the aromaticity of the wine.
