Vipava Valley Jota

A sour turnip or sauerkraut stew with potatoes, beans, and a chunk of dried or smoked meat.

Ingredients:

Potatoes, water, turnip fermented in pomace, cooked brown beans, oil, onion, flour, salt, pepper

Serving:

We Serve the Jota hot, either on its own or with a slice of crusty bread.

Seasonal Mineštra and Vegetable Soups

Seasonal Mineštra is similar to minestrone, based on various seasonal vegetables. Among Vegetable Soups particularly popular are šelinka soup made with celery leaves and tubers, as well as a bean minestrone.

Ingredients, Selinka Soup:

Celeriac root, Olive oil, Celeriac leaves, Flour, Onion, Garlic, Breadcrumbs (fried in butter)

Serving:

We serve the Selinka soup hot, each guests have option to personalize their bowls with the suggested toppings

Vipava Valley Šelinka Soup

Vipava Valley Dry-Cured Ham (Prosciutto)

Meticulously wind-dried and served traditionally with home-baked white bread and wine.

Ingredients:

Fresh ham (pork leg), around 15-18 pounds, Coarse sea salt, Black pepper, coarsely ground

Slicing and Serving:

Once the ham has reached the desired maturity, it's ready to be sliced thinly. We serve the Vipava Valley Dry-Cured Ham (Prosciutto) on a platter with fresh bread and a glass of local wine.

Vipava Valley Štruklji

Rolled dumplings with a walnut, cottage cheese, raisin, and sugar filling. Historically served during grape harvest celebrations or village festivities.

Ingredients:

Flour, egg, water, salt, cottage cheese, walnuts, sugar, lemon, butter, Breadcrumbs (optional)

Serving:

Once cooked, we brush the Štruklji with melted butter, optionally we can sprinkle breadcrumbs sautéed in butter over the top for added flavor and texture and serve the Vipava Valley Štruklji warm

Strudel

A favorite dessert in the valley, with popular variants like cherry, apricot, peach, pear, plum, and apple. In late autumn, persimmon strudel is a delight.

Ingredients:

Flour, water, oil, salt, egg, Ffresh or canned fruit (cherry, apple, apricot, etc.), cinnamon, breadcrumbs, nuts (walnuts or almonds), butter, sugar

Serving:

We dust the top of the strudel with powdered sugar just before serving. Then serve warm, and optionally, with a scoop of vanilla ice cream or a dollop of whipped cream.

Homemade Bleki Pasta

Traditional rectangular noodles served with a simple tomato sauce or alongside meat dishes.

Ingredients:

Flour, eggs, salt, Water (if needed)

Serving:

We Serve the Homemade Bleki Pasta with your favorite sauce, whether it's a simple tomato sauce, a creamy Alfredo, or a hearty meat sauce. Could be add grated cheese or fresh herbs for extra flavor.

Embarking on this stunning wine and food tour was a standout moment of my visit.
